Made from certified organic grapes grown in the Valle Central region near the heart of Chile's winemaking area, the Palin 2007 Cabernet Sauvignon was created by Alvaro Espinoza, one of his country's most well-known winemakers. A student of organic and biodynamic viticulture for some time, Espinoza spent time with the winemakers at Bonterra & Fetzer Vineyards in the late 1990's. He is also recognized as having helped identify the Carmenère grape in Chile, now thought to be one of the region's signature varietals. The '07 Cabernet was aged for six months in barrique (wooden barrels), and is certified organic by IMO Switzerland.
Chilean wines have been a great value for many years, and this Cab is no different. At the time of our tasting the '07 was still very young, but showed some nice structure. We found a velvety mouth, full of fruit and very calm tannins (the age undoubtedly having an impact on the latter). It held up nicely against food, which on this occasion included both steak and risotto. We would certainly drink again, although the wine could definitely benefit from laying down a few years.
